The Mad Subwoofer User Info... | Uhh...Illy is actually a fairly stellar product. Enrnesto's father invented the espresso machine that we know today. His roasting technique and preperation method is totally off the wall and very unique. Those beans are packed with an inert gas so the beans remain(theoretically) as fresh as the moment out of the roaster. Illy beans are considered by many to be a real benchmark, more often than not completely trashed by incompetent preperation. Locally, I'd have to say that Fantastico is a real head above the rest, including Sam's. 2%'s beans have always tasted odd to me but will give you wicked crema. Some Starbucks blends are _very_ nice but most of the ones they serve are pretty raunchy. 2%, Illy +Fantastico espresso blends taste sweet and fine on their own but a darker roast usually pairs better with the sugars in steamed milk. This is why Starbucks espresso is so funky; it is made to be served with milk and isn't so hot straight. Better to ask which cafe in town is best for the way they prepare their drinks as a fine blend will mean nothing in the hands of an oaf. Just my opinion..... - Tue, 12 Aug 2003 10:55am | ||

micoll User Info... | thanks I must certainly agree that illy is a superior product. I have had an espresso from an average-guy type barista using average equipment which was quite above par. From this, I would like to open the debate of barista vs bean: which is most important. FANGU User Info... | a good barista can make all the difference. cleaning the machine, packing (tamping?), timed shots, etc. if the bean itself is good and the barista lacks in skill then it is a waste of good coffee. but i guess it also depends on what kind of roast you like. i'd play it safe and go with a barista who can make the most out of a shot, opposed to good coffee/bad skills. like a bartender mixing drinks, it doesn't matter how good the alcohol is as long as the drink itself tastes good. - Sat, 16 Aug 2003 4:10am | ||

The Mad Subwoofer User Info... | Re: barista vs. bean; IMO, it would be the barista by a long shot. So many factors involved (humidity, etc.) in preparing an artful cup. Those automated machines are actually capable of producing a passable espresso but for that,you would have to be tweaking them incessantly as your grind is completely dependant on the the surrounding environment (again, humidity. Even if you were working with substandard beans it would still be possible to produce a halfways decent cup, albeit with a bit of work; this is the "life gives you lemons, make lemonade" ethic. Not preferable of course(!) As prolific as local roasting co.'s seem to be it is surprisingly difficult to find any making a stellar blend; mostly just medicore junk. David(?) at Fantasico is a very rare exception IMO, and Sam's stuff stands out although I personally don't care for it. He does do an excellent job preparing his drinks though...Actually, it was kinda me who first trained Sam on coffee preperation; he ended up going for Schomer's method while i prefer old man Illy's approach. davescene User Info... | Best coffee I've ever had is Origins from Granville Island. Just discovered it a couple years ago - it's fairly traded, organically grown and roasted fresh.
