2-for-1 roast beef sale at Thrifty's tonight. Got the goods all sliced up and marinating in black bean sauce, brown sugar, worchestershire sauce and liquid smoke.

Now that I've gone back to animal in Nov 06, I almost can't get enough of beef products. (Sadly, my growing waist-line is obvious proof of this fact.)

I have a question: How do you reduce the moisture in it afterwards, in a smoker or dehumidifier kind of dealie?

i dont want to turn this into a big argument threat but not eating meat makes ya feel really good after a while..a lot lighter and not so clogged up in the digestive system.

I wouldn't debate you at all. I was about 12 years off any meat (still was into dairy though). Once I went back to meat, I admit to be pretty ravenous and it's not good for the body.

If I was honest with myself I would eat only fish. Alas, now that I've gone back to animal muscle (and sweet, sweet animal fat), I will probably have a harder time going back to a veggie thing. Mind you, I'm positive my doctor will ask it of me in the not to distant future.

Indeed, trevor. Way cheaper, better quality and less of the carcinogens added with corporate profit chemicals.
A Ronco dehydrator is best. I am going to see about borrowing one from Endeløs today, but if his isn't available I will be going to buy one.
I know you can do it in the oven on low, low temperature, but it smells up the house more and can create a bit of a mess unless you have penty of tin foil strategically placed.
There is no debate, Andrew. I eat beef and you are scared of beef. Nothing wrong with that.
You know what else is really good? Tuna jerky. I had some from California a while back and it was surprisingly wicked. I am sure it can be done at home using sashimi grade ahi and marinade of your choice.

My dehydrator is not the Ronco variety, it is the American Harvist Snackmaster, which is far better. There is a temperature setting, which Ron never thought to include on his inferior product.
Being able to control the temperature of your dehydrator opens a world of delicious potential, and allows for optimal drying performance.

The first batch is done (aside from the nugget pieces). Turned out ok. Should've used a bit more brown sugar and thrown in some garlic.
Gonna give it another go and do a half beef, half salmon load.
Ms. Gabri~hell is going to go for some fruit leather and other dehydrated fruit gems as well.

Dude, some of my buddies stil live on rez in Esquimalt, Songhees, and East/West Saanich.
Some of them have these square based, really tall wood smoke houses.
They get the base burning away till it's smoke and no flames. Then they hang strips of sockeye from cedar rafters 15 feet up in the top. They use alder (I think) and keep the temperature at an even pace for three to five days.

Well, tis the season.
The injun's smoked sockeye is now coming down off the racks.
Three days smoked, over alder, at a constant temperature, in a 15 ft high old school smoke house. Whole Sockeye with the cedar stake still in. - Thu, 22 Nov 2007 9:43pm

I'd like to thank the Salmon.
It's the only meat I eat.
Years ago, when I was a vegan, some First Nations buddies took me out to a Salmon spawn. Every animal, from the majestic Eagle to the lowly mouse, ate on the fish after they finished spawning. Then the carcasses that were dragged into the bush would rot, and feed the forest itself.
