The absolute easiest way...

Get a record player
Get a mixer/amp with a line out or a tape out.
Run a Y cable from the amp to the line in (not the mic input) on your computer soundcard.
Open a wave recording program (cool edit, soundforge, anything that records audio coming in).
Press record on your program & start your record. Make sure that the volumes are set so that the sound isn't peaking.

How to copy vinyl to computer? Interesting... Hey I'll copy over some vinyl and write down how i did it here. I have a line out going to the line-in on the soundcard. Also, be sure to use a decent audio app. I use WaveLab, some people use Sound Forge, a lot of people use Goldwave (aCk). You'll need an app called Steinberg Clean to clean up your vinyl recordings. Also, they won't be as loud as a CD FYI. Sigh, I wish someone would of contacted me, I've done so much analog transfering it's sick, it would take me 2 hours to sit a client down and show them how to do the process. Just one thing to add.... Unless you're using a DJ mixer, phono signals need to be impedance matched and processed with the RIAA curve. To do this you'll need a phono preamp between the turntable and the mixer/audio interface/souncard. Older (and some new) home stereos have one built in. I ended up buing a dedicated phono preamp for this application. Also don't forget that real turntables have a ground wire that needs to be connected too. Oh, one more thing....phono preamps put out a -10db unbalanced signal. Pro audio interfaces use +4db balanced inputs. Some souncards will allow you to switch between -10 and +4 but you may have to deal with this issue too.
